Cheese Pie

My Aunt Julia would always make this for Thanksgivings.This dish is an excellent replacement for macaroni and cheese pie,very light and delicous.

10 slices bread- sunbeam thin sliced.
1/2 lb.grated extra sharp cheese
2 cups milk
3 beaten eggs
1 tsp salt
pinch red pepper

Lightly butter bread with soften butter.Cube each piece.
Put half in a greased 9inch square dish, cover with half of the cheese. Repeat.
Mix milk and eggs.Add salt and pepper.
Cover and refrigerate over night.
Bake in a 275 for 45 minutes or until a knife comes out clean.Enjoy!

Grandmothers Southern Cornbread Dressing

This has been passed down in my family over several generations.This is a
very moist dressing.

1 recipe cornbread(omit sugar)
1- 10 count refrigerated biscuits,baked
1 small to medium onion
1 14 oz.can chicken broth
4 Tbl.butter
sage to taste
salt and pepper
boiling water

Process 1/4 cornbread,several biscuits and quarter of onion.Empty in large bowl;repeat until all is processed.Heat chicken broth.
Place butter on top of mixtur;Add salt,pepper,sage.Pour broth over top.Mix and add enough boiling water to make a moist dressing.
Spoon into a 9"square casserole, being careful not to packed down.
Bake in a 350 degree oven until warm.

My Mother and I always enjoyed tasting to see if we needed more sage or salt
Of course, you can add your own ingredients...sauted celery,apple,nuts,etc.
Personally, I like just like it is!

Apple Omelet

This is a dish my sister shared with me and has been served at many meals,with company and just family...

1 8oz.can of crushed pineapple,drained
2 cups applesauce
3 eggs, well beaten
1/2 cup brown sugar
4 Tbs.butter

Preheat oven to 350 degrees.Combine drained pineapple and applesauce.
Add lemon juice and remaining 3 ingredients,mix well.Pour into a greased casserole dish.Bake for 40 minutes or test with knife.

This dish compliments any meat .

Nancy's Meat Loaf Piquant

My husband loves meatloaf, so I have tried several recipes over the years.
I just could not find one that satisfied me.That being said ,I tried adding this and changing that and came up with this recipe.Family and friends love this one.

2/3 cup bread crumbs,fresh
1 cup milk
1 lb. lean ground beef
1/2 lb.Jimmy Dean hot sausage
2 eggs,beaten
1/4 cup grated onion
1 tsp.salt
1/4 tsp.pepper

Preheat oven to 350 degrees.
Soak bread crumbs in milk.
Add beef and sausage, then remaining 6 ingredients(I us my hands for this)

You can place this mixture in a loaf pan,but I prefer a loose loaf, so I place it in an oblong pyrex dish and shape in a loaf.
Bake for 45 min.

Piquant sauce:

6 Tbl.brown sugar
1/2cup ketsup
2 tsp.dry mustard.
Combine all and pour over meat loaf the last 15 minutes.

This is a very moist meatloaf and what else to go with this,but mashed potatoes,lima beans and Apple Omelet(next post)

Holiday cocktails:Pumpkin Pie Martini and Cranberry-Raspberry Sangria

I was going thru a cookbook and found these cocktails.I usually serve Bloody Marys as guest come in before dinner,but think I will surprise my guest!

Pumpkin pie Martini : serves 2

2oz. vanilla vodka(1/4 cup)
2 oz. creme de caco (1/4 cup)
1/4 tsp.heavy cream
1 tsp. pumpkin pie spice
whipped cream(garnish)

Fill cocktail shakes 1/2 way with ice cubes
Add the vodka,creme de coca,heavy cream and pumpkin pie spice, and shake well.
Dip the rims of martini glasses into a bowl of whipped cream.Strain the cocktail in to glasses.

This just has to be delicious and a keeper!


Cranberry- Raspberry Sangria....serves 6

48oz. cranberry raspberry juice cocktail
750 mi.red wine(dry full-bodied spanish)
2 tsp. grand marneir
1/4 cup sugar
1 orange..thinly sliced
1 lemon ..thinly sliced
1 cup cranberries..or fresh,fresh raspberries
1 cup chilled club soda

Combine first 4 ingredients in a large pitcher, stirring
until sugar dissolves.
Taste at this point and if you want it a little sweeter,
add a little bit more sugar.
Add fruit slices and cranberies; cover and chill at
least 8 hours.
Stir in clud sode and ice cubes just before serving.

This would be a wonderfull way to start the holidays!Enjoy!

Pork Tenderloin with Balsamic-Cranberry Sauce

1 1/2 tsp butter
8-10 oz. pork tenderloin
1/2 cup chopped onion
1/2 tsp chopped fresh rosemary
1/2 cup chicken broth
1/3 cup cranberry whole sauce
1 tbsp. balsamic vinegar

Preheat oven to 450 degrees.Melt butter in heavy large oven proof skillet over medium heat.Sprinkle pork with salt and pepper.Sear pork on all sides. Place skillet with pork in oven.Roast until thermometer inserted into center registers,about10 minutes.Remove and place tin foil over meat and let it rest,
Melt remaining tsp.butter in heavy medium skillet over medium high heat.Add onion and rosemary,Saute until onion softens,about 3 minutes.
Add broth,cranberry sauce and vinegar and wisk until cranberry sauce melts.
Transfer pork to work surface.Scrape any juices from skillet into cranberry sauce.Boil until sauce has reduced enough to coat spoon thickly,about 6 minutes.Season with salt and pepper.Slice pork and serve with sauce.

Serve with mashed potatoes and broccli or sauted aspargus.Not only does family enjoy this but wonderful for guest.

sweet potato custard

I really do not know what happened when the ingredients were published.But to clear up any confusion I will list them again:

3 medium sweet potatoes..about 2 1/2 cups mashed
1 cup sugar
1 cup sour cream
1 tsp. vanilla
1 1/2 sticks butter
1 can flaked coconut...I grate mine fresh
fresh nutmeg
white raisins
